About this wine

Noumin Rosso is a soft, fruity, eminently drinkable dry red wine, full of fruit and hope, made from a variety of grapes grown throughout Japan — Merlot, Cabernet Sauvignon, and Muscat Bailey A typically forming the backbone of the blend, each grown vigorously in its own vineyard, with other varieties added for aromatic lift, for a delicious harmony born of growing the right variety in the right place. Regardless of the blend in a given year, the wine is always balanced, fruity, and approachable — equally at home with hamburgers, roast chicken, or grilled pork.

Tasting Notes

The nose shows raspberry, strawberry, and blueberry, with a green-pepper-like spiciness, alongside oak-derived licorice and cacao. The attack is light and fresh; the tannins are very gentle, giving the palate no rough edges, while medium acidity lends the wine freshness. The finish is supple and well balanced.

Vinification

Ripe grapes are sorted, and only the best bunches are destemmed and lightly crushed; a portion undergoes carbonic maceration. The must is placed in stainless steel tanks and encouraged to ferment gradually, starting at a low temperature, with pump-overs performed as the must is slowly warmed. Fermentation begins naturally with wild yeast after two to three days. After about ten days of maceration, the wine is pressed. The wine is then transferred to oak barrels and stainless steel tanks, where malolactic fermentation is carried out by wild lactic bacteria, and aged for about 5–6 months in oak barrels, oak tanks, and stainless steel tanks. After racking, it is filtered without fining, and bottled.
