About this wine

Noumin Dry is a “stylish, everyday white wine of Japan.” Its firm acidity — from grapes grown in cool climates, such as northern regions and high-elevation vineyards — lowers the wine's pH, stabilizing it and keeping it sound. The 2024 Noumin Dry is made from white wine grapes grown by skilled growers, prized for their distinctive aromas and firm acidity. It also includes Müller-Thurgau and Bacchus from Coco Farm & Winery's own Vineyard Liberté in Yoichi, Hokkaido.

Tasting Notes

The nose shows pear alongside fresh notes of blackcurrant bud and lemongrass. The palate is crisp and dry, with well-integrated acidity and fruit character. A note of herb and citrus zest lingers on the finish as an accent. It's a fresh, clean, and pure expression of dry white wine, with a graceful character that pairs beautifully with raw oysters and sushi, and versatile enough for a wide range of fresh, varied dishes.

Vinification

All varieties are co-fermented together. Grapes are destemmed and gently pressed; the resulting juice is left to settle at low temperature overnight, then racked the next day into stainless steel tanks. To preserve its aromatics, the must is kept below 21°C at night and fermented with wild yeast for about three weeks, followed by malolactic fermentation carried out by wild lactic bacteria. The wine is then aged in stainless steel tanks for about 5–6 months, after which it is racked, blended, and filtered.
